Easy Chocolate and Coffee Self Saucing Pudding and Achieving Some Stuff


I know, I know.......more food, but there is a reason.  I am doing more food styling this Friday and I have been experimenting with food, vintage and photographic surfaces.  This one was all about dark and rustic.  And let me tell you this pudding was about as good as it gets ladies.  It was subtly coffee, all the while being subtly chocolate too.  And talk about comfort food.  Texturally this was amazingly smooth and felt like a warm bomb of love and happiness, as it slid down the back of my throat.


I made it on the wet weekend just past and as you can see, it was a hit.  It comes courtesy of Donna Hay, of whom the chief cook and bottle washer in each home, should be eternally grateful.  I cook loads of her stuff.  This lass well and truly fits the Beach House kitchen brief. Her recipes are easy, fresh and most of all......delish.


So there is a food styling shoot again on Friday and at this stage it's at my place, so I am in lock down mode.  The house has never looked cleaner or sparkled more.  I have cleaned out the fridge today, the oven was done yesterday.  I can't believe how many oats were at the back of the fridge and the oven, well lets not go there at all.  I also have an electrician here, installing my iron chandelier over the dining table and throwing in a few down lights for good measure.  Can't afford him, but this thing has sat on my dining table for 2 years now and there's nothing like a bit of pressure to get one off one's behind to achieve what has been staring one in the face for way too long.  Hope the Beach House Brats don't notice the toys I've chucked out. We are having a Spring clean here in Winter, all in aid of the fact that my house is to be over run by photographers, stylists and cooks this Friday.  I mean the reputation I have made for myself on this blog, has to be maintained, does it not? Ha Ha!!!!  One must keep ones tiara firmly planted square on ones head.  OMG I've been watching too much Diamond Jubilee footage.


So anyway, I'll bring you a full report of this baby when she's in place, but until such time ladies, here's a fabulous recipe which I encourage you to try.  It will definitely become a Beach House staple.

Chocolate and Coffee Self Saucing Pudding

1/2 cup of milk
1 egg lightly beaten
35g butter melted
1 teaspoon vanilla extract
1/2 cup plain flour sifted
1.5 teaspoons baking powder sifted
1 tablespoon instant coffee sifted
1/4 cup almond meal
1/4 cup brown sugar
1/2 cup brown sugar
1.5 tablespoons sifted cocoa powder.
1 cup water
Thick cream to serve

1. Preheat oven to 180C.
2. Place milk, butter, egg and vanilla in a bowl, whisk to combine.
3. In a separate bowl, oven proof ceramic pudding bowl, place flour, baking powder, coffee, almond meal and 1/4 cup of brown sugar and mix to combine by hand.
4.Gradually add milk mixture to the dry ingredients and whisk to combine well.
5.Place remaining sugar, cocoa and water in a pot over a medium heat.  Stir until sugar dissolves and bring mixture to the boil.
6. Remove from heat and pour over the coffee mixture
7. Bake for 25-30 minutes and serve immediately with thick cream.

  1. Self saucing pudding would have to be my favourite winter dessert- not that we eat dessert that often but usually over winter I will whip up at least one of these and my other fav apple pie.
    I loke the addition of coffee and almond meal and will just substitute in GF flour.

  8. I haven't had chocolate self-saucing pudding since I lived in Australia - we always just did the box stuff when I was a kid - I might have to give this recipe a try!
