Caprese Salad with Avocado


Good Morning Beach Dwellers

Lots of entertaining and catching up with old friends, here at the Beach House this week.  So no time to blog.

However, I did think you might like this very simple Caprese Salad with Avocado, to add to your Australia Day table next week.  Our current house mate is married to an Italian and we have been keeping it simple this week.  Visits to the beach, which in this glorious run of Sydney weather we are having, are like swimming in champagne.  It takes alot for me to don a cozzie theses days, but I am out there this week, ducking and jumping waves, with the best of them.

Long lunches and dinners with mutual friends and reminiscing about lots of sliding door moments.  The girl staying with us this week, sat next to Mr Beach House on a plane on the way to Hamilton Island race week, perhaps the biggest event on the Australian sailing calendar, almost 20 years ago.  He needed a crew and she needed a berth and the rest is history.

This girl met her husband through Mr Beach House and ended up being at the birth of our first child, because she is a mid wife and subsequently became a great friend of mine too.  All because she sat on that particular seat in the aeroplane.  Amazing how life pans out isn't it?


Caprese Salad with Avocado

1x 250g punnet of cherry tomatoes, sliced in half
1x 250g punnet of mini baby boccincini cheese, thickly sliced
1 large avocado sliced
1/4 cup loosely packed basil leaves
2 tablespoons lemon infused olive oil.  Plain olive oil is fine
1 tablespoon balsamic vinegar.

Arrange tomatoes, avocado and bocconcini  on a platter.
Tear basil leaves and place them over the salad.
Combine oil and vinegar in a jug and whisk with a folk.
Drizzle dressing over the salad.  Season with salt and freshly ground pepper and serve immediately.

And Enjoy 

I have a daily ritual at the moment and it is very easy on the soul.
Big group breakfast with house guests, morning beach romp 'til it gets too hot and then home to write my book.  Man do I love Summer Down Under.  I hope 2014 is being kind to you so far.

    to hear more about it.

    1. I have only started writing it, but it is pouring out of my finger tips and I am loving remembering my foot loose and fancy days as a young girl discovering herself and the world at the same time. It's about working around the world in Ski resorts. I started writing for the blog, but released there is a book in it. It is also very racy, so not sure I will be publishing it in my own name.

    Now then, this salad looks fab. Can you give me any tips on how to slice avocado well???? Mine end up looking a mess compared to yours.
