Budget Family Meals- Salmon & Dill Loaf

This recipe has been in our family for years.  It first came from the neighbours at my childhood home.  In the 1970's they rented out their house and moved to America, so the father could take up a journalist posting in New York.  We got their dogs and they moved Stateside.  A deal this 7 year old, at the time, remembers being very happy with.  When they returned after several years, I was in awe of their furniture, clothes and art works and thought they were so sophisticated.  Like nothing I'd ever seen before.  This recipe came from them around that time, as well, so is probably American.  It was also about that time my mum began to subscribe to American Womans' Day.  Believe me, it was a cultural void in our little suburban backwater in those days.  I still refer back to many of those American Woman's Day mags today, for crafting ideas and recipes today.


On the weekend just past, mum served up this Salmon and Dill Loaf for lunch.  It is so easy and delicious  and the Beach House Brats happily ate it, so that's all the boxes ticked.  It's perfect as a week night wonder, or ladies light lunch served with a salad.


Salmon and Dill Loaf
serves 6

1 x 415g  or 14.5oz. can salmon
4 tablespoons butter
1/4 cup milk
1 cup cornflake crumbs
3 eggs separated
1 teaspoon fresh dill chopped or 1/2 teaspoon dried dill
2 teaspoons chopped parsley
1/4 cup diced capsicum
2 teaspoons lemon juice
salt and pepper to taste
Lemon and fresh dill to serve.

Preheat oven to 170C (moderately slow)
Grease a loaf tin. Line with baking paper.
I just put my baking paper in very roughly, so the sides are over lapping and can be used to lift out the loaf after cooking.

Drain salmon liquid into a small saucepan.  Add butter and milk. 
Flake salmon and reserve.
Heat saucepan over a moderate heat stirring, until butter is melted.
Stir in crumbs, remove from heat and let cool for 5 minutes.
Add salmon, egg yolks, dill, parsley, capsicum, lemon juice, and salt and pepper to crumb mixture and mix well.
Beat egg whites until soft peaks form and fold into salmon mixture.
Turn into greased and lined loaf tin and bake in oven for 1 hour.
Allow to cool in the tin for 15 minutes before turning out. 

Garnsh with lemon and fresh dill 

To avoid crumbling, allow to cool for a further 5 minutes before slicing.

The loaf can also be chilled and served cold with a squeeze of lemon.



In other news, I must tell you about my Valentines Day, as it was somewhat of a coup.


Mr Beach House was going to be sailing, so organsing a date with him, would be like flogging a dead horse. It's always best to let him go and do his thing, but I wasn't to be defeated.  Instead I organsied to have dinner with a girlfriend and our kids at Cranky Fins in Palm Beach.

I managed to get into a dress, I haven't worn since pre baby days. It's 15 years old and was bought somewhere in Noosaville.  It was a bit of a squeeze, but I texted my friend, with a shot of me in it and just wrote "Yes or no?"

Her answer came back "Definitely", and so I did.  I felt 25 again and like I was getting ready for a hot date. She wrote back and said I was.  I truly believe dressing up and doing your hair and make up, no matter who the audience, is so good for the soul.  These days, I primarily just do it for me and it feels good.


We had a fabulous night, the funniest bit was walking along the back beach at Palmy in the moonlight after dinner, with the kids busting all the canoodling couples picnicking on the beach, along the way.  They were all good sports and the kids had a ball.

They said, it was their best Valentines Day ever.  Funny!!!!!

  1. Now I would love that salmon loaf but I've been so slack and my kids don't eat nearly enough fish... maybe they'd give it a go. I did love the story of the American magazines... how unsophisticated were our childhoods... will our kids look back on theirs and feel the same way?? Love the dress BTW and delighted to hear of a hot date and the kids disturbing canoodling couples- excellent life lesson for them!!

  8. I have never heard of a salmon loaf, but it sounds delicious! I love salmon + dill + lemon. Your dress looks fab, and you are right that it makes you feel great to get dolled up sometimes.
