Salmon and Prawn Pasta with Leeks Tomato and Dill 

I am always looking at ways to get more fish into our weekly diet.  We do eat grilled fish and salad mid week, but as Friday night rolls around, I like to do something a little more stylish for our family dinner. I don't eat much pasta at all, but the kids love it and after 11 years, I am really trying to get to the stage of cooking only one meal per night.   The Beach House Brats like bland fatty food and I like low fat spicy food and therein lies the dilemma.  Not wanting to dumb it down too much, this recipe is one that we all enjoy and is a nice compromise between the two briefs. 


Pasta and cream are definitely not every day foods at the Beach House, but I do have one break out day a week and it seems to be Friday.  As long as it doesn't become Saturday and Sunday as well, I think  my weight loss plans will remain on track.


Salmon and Prawn Pasta with Leeks Tomato and Dill 
serves 4

250g or 0.5lbs Atlantic Salmon or Ocean Trout (I use 1 Aldi fresh salmon pack)
300g or 10.5 oz. fresh prawn meat (I use the Aldi garlic prawn pack and discard the butter.)
1 tablespoon of butter and a slug of light olive oil.
1 leek finely chopped
1 tablespoon dry vermouth
1 large ripe tomato diced
1 tablespoon fresh dill finely chopped, plus more to garnish
2 teaspoons capers
1/4 cup lite cream
Salt and pepper to taste
Lemon wedges to serve
Pasta cooked according to the directions on the pack, for 4 people

Place salmon in a fry pan and cover with water. Bring water to the boil.  Turn down to low and poach for 1- 5 minutes depending on how well cooked you like your salmon.

Remove salmon from the pan and flake.

Reserve 3 tablespoons of the pan liquid for later.  Set salmon aside and discard the remaining water.

Over a moderate heat, melt the butter in a fry pan with a little oil, so as to avoid the butter burning.

Cook leeks for several minutes until soft.

Push leeks to one side of the pan and cook prawns for 2 minutes.

Add vermouth, tomatoes cream, salmon liquid, dill and capers.

Season with salt and pepper.

Add flaked salmon and heat gently.

Serve over cooked pasta with dill and lemon wedges to garnish.


This is easy easy easy and very tasty.  My mum has been serving this one up for many years and it is always lovely and light.



Apart from diet break outs for our family over the weekend, the littlest Beach House Brat went to a kiddo party down at the beach and I thought I'd take a few shots for my northern hemisphere friends who are waiting out the end of Winter. This kind of thing is just over the horizon for you guys, as we go into the cooler months Down Under.  I hope you enjoy my favourite Sydney beach.  It's the one we were married on.

  1. Yummy and refreshing recipe. And sounds so easy too. I think we will only have few more days of warm weather and the autumn chill will be here soon. Enjoy the beach while you can.

  2. Oh I am envious. I would love that myself, but 50% of the bairns would be appalled, they are terrible fish eaters... and the silly veggie husband wouldn't eat it... you must feel like a nutritional goddess when you serve it up... sigh, sigh... I shall cook it for the teens and myself sometime when hubby is away, and the little ones can learn to grow into it. Looks divine.
