Easy Kale Chips Recipe

I just love eating healthy.  I've decided it's because I am a control freak and it makes me feel I am doing something positive towards good health outcomes for myself.

I was gifted this kale, recently whilst attending a Planet Ark PR event.   I have never used it before, but as I cannot stand waste, I decided to bake some Kale Chips before the bunch of beautiful greenery turned yellow, at the back of my fridge. I also had a back up plan, which was to bake some real chips, in case the Kale was horrible.

Mr Beach House was raving about the Kale chips over dinner, which surprised me as he was munching on the potatoes.  Yep you guessed it, he thought the spuds were the kale chips.  He only eats healthy by attrition and I am ever so grateful that he is one of those guys who is happy to eat anything I dish up.  It does make life a little easier in the kitchen.

As a middle aged Australian male, of course Mr Beach House preferred the spuds to the kale, but he was still OK with the green stuff and willingly gobbled up his share.


The protein part of the meal was salmon.

Salmon has now become a healthy staple at the Beach House as well.  I got the recipe from the lovely Helene over at Croque Maman blog last Summer and it is truly delicious.  It's a really nice variation to always pan frying fish.  Helen uses cream cheese in her recipe and I use Danish feta and different herbs depending on what I have at the time.

The French recipe is called saumon en papillote, which translates as Salmon in Paper and takes about 20 minutes to prepare and cook.  So of course I love it because it ticks both my easy and delicious must have recipe boxes. With just 3 ingredients, this Kale recipe is well worth a try.  The health benefits are wide ranging and they really were very tasty.

Baked Kale Chips

1 bunch of kale
Olive oil to drizzle
Salt to taste

Preheat oven to 180 C/375 F
Cut Kale into 2 inch/ 4cm pieces
Spread on a baking tray and toss with salt and oil
Bake for 10 minutes
Serve as a side dish.

  1. I'm growing Kale. I use it in my juices. I tried home made Kale chips in Canada and thought they were very bitter. Is that normal?

    1. I didn't think they were bitter. They were very moreish to me.

  2. I often make them with apple cider vinegar as well so you have salt and vinegar kale chips. If you keep them in an airtight container they stay crunchy. My kids love them and they can cost a fortune to buy. I dry them in a dehydrator but a low oven would be fine too.

  3. I remember you posting about this on Facebook and so glad you shared the recipe. I think I'm going to go to my garden and pick some Kale and do this for dinner tonight! love it!

  7. I haven't tried kale before so I don't really know anything about it. I've been hearing a lot about it recently which is why I decided to research on it. This is the first blog I found about kale and I'm glad it is because those recipe make me grave for kale all of a sudden. I just love food that are healthy and at the same time stimulate my appetite. I am taking note of this recipe and go to the grocery the first thing tomorrow. Thank you for sharing this!

  8. Favourite dinner dish in this house is salmon and kale! I also add a bit of lemon juice and mix it in with the olive oil. Then, when they're done, sprinkle some dry chilli flakes…YUMMO!
