Baked Figs with Prosciutto and Goats Cheese

Just a quickie from me today as the window of opportunity for figs, though delectable, is short and oh so sweet. I find figs are best eaten simply, as the French and Italians do it.  I was recently inpired, when I dined out with my three longest standing girlfriends for dinner.  The Italian restaurant served them with Gorgonzola, which worked equally as well as Danish feta/goats cheese, which is what I have used here

Baked Fresh Figs with Prosciutto and Goats Cheese

Serves 2 

8 fresh figs
8 slices of prosciutto or Serrano Ham
150g or 1/2 cup of goats cheese, Danish Feta, or Gorgonzola

Preheat the oven to 180C or 350F
Line a baking tray with baking paper
Top and tail figs so they sit upright on the tray
Cut a cross in the top of the figs,3/4 of the way down into the figs, being careful not to go right through to the bottom.
Place a heaped teaspoon of goats cheese into the incision
Wrap figs with prosciutto.
There's no need to secure with a tooth pick.

Bake for 20-25 minutes until prosciutto is crisp

This is quality food served simply and at its best.

    Wouaou !! Je ne peux qu'adorer !! Je suis une grande "malade" de figue !!
    J'aime tant que je peux même comparer parfois ma peinture à de la figue (notamment dans ma dernière publication!)
