Yummy Apple Cake Recipe


Well it's the simple things and living in the moment, which can often be the greatest of life's pleasures.  Malcolm flew back to Paris and left us with a box of food his family had not used.  I cannot stand to waste anything and there were a few scruffy apples just begging to be used up.



So I made this fabulously yummy apple cake and took it down to Manly Dam with a thermos of tea and the bikes, for a simple afternoon of exercise and being together.  The parking fees were at 21st century prices, at $18 for 3 hours, but the rest of it was decidedly 20th or 19th century for that matter (read free) and most enjoyable.  The boys set off  on the mountain bike track and I watched the littlest beach house brat, whilst she had a dip in the dam.


After all that exercise we settled in for a mug of tea and a slice of apple cake, which was still warm and a good catch up with friends.  Is there a better way to spend a lazy Saturday afternoon?  I think not!!!!!  


This cake was really lovely and I highly recommend it

Yummy Apple Cake Recipe

110g/1/2 cup butter melted
1 cup caster sugar
2 eggs
2.5 cups of plain or all purpose flour
a pinch of salt
1 teaspoon baking powder
2 teaspoon ground cinnamon
110ml/4 fl.oz milk
3 medium sized apples peeled and diced into thin 1cm / 1/2 inch pieces
2 tablespoons raw sugar. Use brown if you don't have raw.

Preheat the oven to 180C/350F
Grease and line a loaf tin with baking paper
Mix butter and sugar
Add eggs and mix to combine.
Add flour,salt, baking powder and cinnamon
Fold in the diced apple
Place the cake mixture in the loaf tin, then sprinkle the top of the cake with raw sugar.

Bake for 35-45 minutes until golden brown and a skewer comes out clean. 
Cool in the tin for 10 minutes then remove from the tin and cool on a rack.

  2. Yum, and very easy. I have some gash old apples languishing in the fridge that need to be transformed, will try this.
