Easy Healthy Homemade Granola

My daughter spends her down time watching You Tube.  It's what the next generation does.  It's the new TV and is basically how the New Millennium generation consumes their media.  The down side for conventional media is basically, that they are stuffed, in the long term anyway.  The upside for the
members of the Beach House, is that my little girl is learning to cook, way earlier than I ever did.  As an aside, my son reckons peak blogging has passed too. I tell him my generation is into slow media. He says that's not the way his cohort like it.

Anyway, as far as You Tube is concerned, my daughter has started watching a Scandinavian girl called Sarah, who pumps out beautifully produced videos, showing you several recipes at once, or even up to 10 high speed mini projects, to spruce up your girly bedroom in one 15 minute video.  Wow!!!!  She must be at it for hours!!!!!  Whatever she is doing, has certainly got my little girl watching.

The granola recipe Sarah produced was a funny one, because spunky blond Sarah goes way too fast for you to be able to make the recipe and she fails to give you all the ingredient measurements.  Anyhoo no probs, I guess in this age of instant gratification that hardly matters.  Sarah looks gorgeous, the granola looks delicious and healthy and the 'how to' part of the recipe is all over in what seems like a few nano seconds.  I doubt the point is that anyone actually make it.  It's all about hits and clicks right???  And click we did, several times......Ka ching!!!!!!

All power to Sarah though and hugs to her too, as she inspired my daughter to make some granola, with what we had on hand in the pantry.  Lucky my daughter has a mum who knows her way around a kitchen.  Lord help anyone relying on the You Tube video to actually produce a dish.  It may be slick, if a little lacking in relevant information.

But thank you Sarah for the following.  I have long bemoaned the quality of the regular sugar and salt laden cereals on offer at the conventional supermarkets.  Accordingly, we eat porridge or eggs most mornings, but there is nothing like a little variety.  This granola inspired by Sarah's video, was absolutely fantastic and is just as nice raw, as toasted.  I think this one will now be a staple in my daughter's culinary repertoire.

So nice in fact, that I ate it for dinner last night, after a big lunch and breakky this morning too.

Easy Healthy Homemade Granola

2 cups rolled oats
1/2 cup flaked almonds
1/2 cup sunflower seed
1/2 cup pumpkin seeds
2/3 cup macadamia nuts roughly chopped
1 tspn ground cinnamon
1/2 cup desiccated coconut
pinch of salt
1/4 cup of sultanas or dried berries of your choice
1/2 cup pure maple syrup
1/4 cup extra virgin olive oil
1 tspn vanilla extract

Preheat the oven to 150C or 300 F.
Line a baking tray with baking paper
Place all the dry ingredients in a bowl and all the wet ingredients in another bowl.  Mix each to combine.
Pour the wet ingredients into the dry ingredients and mix well to coat.
Spread the mixture evenly into the tray and bake for 40 minutes
After 20 minutes baking, take the tray out of the oven and stir.  Smooth over again with a spatula and bake for the remaining 20 minutes

Serve with natural yoghurt, or milk and fresh fruit.  Sooooooo yummy.

Watch this space for more culinary delights.  I am looking forward to the day, she can take over cooking dinner too.
