Chocolate banana bread. Great for school lunches


Yummy yummy yummy I've got love in my tummy.  If this Chocolate banana bread were a song, well that would be it.  Great for school lunches, because it has no nuts and so much better for your babies than commercially produced  junk.  This junk is good junk. Speaking of junk, I saw a funny garage sale sign this weekend that said. "Just image, our crap could be your crap".

I had a giggle and I thought to myself, if I ever have a vintage homewares store (highly unlikely) but if I did, I would call it Junk and Disorderly, with that bit about my crap potentially being yours, as the by line. So many ideas and never enough time to drive them.

Anyway, I do find time to make this cake for school lunches most weeks, as it's quick and easy. with a very high wow factor to low effort ratio.  Go forth and enjoy.

Chocolate banana bread

4 ripe bananas
1/2 cup extra virgin olive oil
3 eggs
1.5 cups loosely packed brown sugar
1 teaspoon vanilla extract
1.5 cups self raising flour sifted
1 teaspoon ground cinnamon
1 heaped tablespoon of cocoa powder
1/2 cup dark chocolate melts roughly chopped
cooking olive oil for spraying

Preheat oven to 160 C or 325 F.
Grease and line a loaf tin with baking paper.
Put the banana flesh into a mixing bowl and mash with a fork.
Add the oil, eggs, sugar and vanilla and mix well to combine.
Add the cinnamon and flour and combine well.
Pour into the loaf tin.
Bake for 1  hour and 10 minutes.
Cool in tin for 5 minutes before turning out onto a wire rack.
Allow to cool completely, before slicing.


In other news, someone got her Halloween costume in the post the other day.  Note the happy jiggle.   It will probably be rags by the time the 31st comes around, as I don't think she has taken it off in several days. But at least she is behaving like an angel. Last year she was banned from trick or treating, due to bad behavior.  As a consequence, she had to stay home and hand out strawberries.  This year, she has other plans but knows I mean business, when I say she better behave.  So far it's a strategy that is working.


Now all I have to do between now and Halloween is find a non surgical way to hitch up the skirt, so she doesn't trip over it whilst running from house to house, juggling the worst kind of junk of all.

  5. Yummo! I think the world is conspiring to get me to add chocolate to banana bread. It's a fairly compelling argument :) Cute costume!
