Moist Flourless Chocolate Cream Cake Recipe


I am nothing, if I am not a chocoholic.  I was always the kid at the birthday party refusing soft drink and lollies and hoeing into the Kentucky Fried Chicken and tap water.  I've never been a great fan of sugar, Chocolate on the other hand, well is there anything else?


This cake takes chocolate and perfects it.  It is absolutely to die for.  So moist and of the melt in your mouth variety.  Textually it's stunning.

I served it up to friends at dinner last weekend.  Friends who live for months at a time in Europe and are not unaccustomed to dining in Michelin starred restaurants and they loved it.  It's hard not to impress with good quality chocolate cake on your side and this, cake really makes the grade.


Speaking of sugar, Halloween has really taken off in my suburb.  We never celebrated this holiday in Australia when I was a kid.  My parents' generation escaped, completely ignorant of this sugar fueled spook fest.   Lucky them.  As you know, I HATE lollies, so it takes all my energy to assist my kids to participate, but assist I do.  They love it, so what is a mother going to do?  Become a complete hypocrite and jump on board, that's what.  I tell you, the alternative just does not bear thinking about in terms of pester power.  I am strong willed, but even I would never get my way on this one.
So participate whole heartedly we did.







I posted this shot, as it says alot about my kids' personalities.  My almost teenager boy, hangs back until the very end to wait and see what happens before he jumps in,  Whilst my very confident, much younger daughter runs in as fast as she can, so as not to miss out on a thing. A picture paints a thousand words and this one is no exception to that rule.


And here's a break down of my daughter's costume.  You will see what I mean about confidence.


Moist Flourless Chocolate Cream Cake Recipe

4 eggs
270g or 1 1/4 cups caster sugar
150ml or 2/3 cup extra virgin olive oil
150ml or 2/3cup milk
2 teaspoons vanilla extract
175g or 3/4cup almond meal
50g or 1/2 cup cocoa, sifted plus extra to dust
1/2 teaspoon baking powder
300ml thickened cream
Chopped macadamia nuts (roasting optional)

Preheat the oven to 180C or 375F

Grease and line a 21cm/9" spring form baking tin
Put eggs and 1 cup sugar into a mixing bowl.
Beat for 1 minute or until combined
Add olive oil, milk, vanilla, almond meal, cocoa and baking powder and mix well until combined.
Pour into prepared tin and bake for 1 hour.
Cake will come out quite wobbley but don't worry
Cool in tin for1 hour then use a knife to loosen the edges before unlocking the spring.
Decant cake onto serving plate.
Beat cream until soft peaks form(do not use low fat cream or it will not whip up)
Stir through remaining sugar
Spread cream over the top of the cake and use the pallet knife or spatula to make little peak
Sprinkle cake over with nuts
Dust lightly with cocoa and serve.

  1. Your costumes look great :) I didn't celebrate Halloween this year as I wasn't well but I would love to throw a big Halloween party, maybe next year!
