Prawn and Chilli Appetizers with Lime and Corriander on Bilinis

It's hard to imagine a time without PHILADELPHIA Cheese in our culinary repertoire, but my flight attendant mum remembers when it was first introduced into Australia in the 1960's.
It was rather avant guard and made it onto the airline menus, before it was available in the supermarkets. So none of the passengers knew what it was. During in flight service, a small scoop of PHILLY cheese was placed in the hollow of half a tinned peach, where the seed had been removed.  Many passengers called the flight attendants back saying, ''I think something is wrong with the cream.  It's gone hard."  


Once they were reassured all was well and encouraged to try it, they loved it in the peach and clearly the product took off, because 50 or more years later, everyone knows PHILLY Cheese and these days it is usually on an entertainer's shopping list for the holiday season. 

It's especially popular at this time of year, when you need to make something that is quick and easy, but will also be light and refreshing, with a bit of wow factor thrown in to impress your guests.

Now we have all used PHILLY as a spread, but have you used the Pourover range?  I have tried it as a dip at parties, but did you know Sweet Chilli PHILLY Pourover can be great as an ingredient in an appetizer recipe as well?

It's simple and tasty and oh so easy to use.


So here's all you will need to make the topping for this simple, but delicious appetizer.  You could serve this on a corn chip, baked pita bread chips, or a mini popadom.  However, I made some bilinis as the base, because with this option, you can pre prepare and leave your bite size morsels in the fridge, covered for several hours, before your guests arrive, which upscales the organisation factor somewhat.


Remember, if you use corn chips or a savoury biscuit base, beware they will go soft if you assemble them too early.  So you will have to put the appetizer together just before you serve them.


Prawn and Chilli Appetizers with Lime and Coriander on Bilinis
makes 32

 For the  Prawn Topping
1 x 250g container of Sweet Chilli PHILLY Pourover
Juice and zest of 1 lime
1 tablespoon of coriander finely chopped, plus 32 leaves to garnish
32 green prawns peeled
Peanut oil and butter to cook prawns

For the Bilinis
1 cup plain flower
3 teaspoons baking powder
1 pinch of salt
1 egg
1 cup milk
50g melted butter (extra to cook bilinis)

To make the Bilinis
Sift the dry ingredients into a bowl
Slowly whisk in the milk
Add the egg and butter and whisk until any lumps have disappeared.

Heat some butter in a non stick pan
Place a teaspoon of the batter in the pan.
Cook for 2-3 minutes and flip. Cook for 1-2 more minutes until golden.
Set aside to cool. These can be made the day before.

To make the Prawn topping
Saute the prawns in oil and a small knob of butter in a fry pan.
Set aside to cool in the fridge.
Decant the Sweet Chilli PHILLY Pourover onto a plate.
Using tongs to hold the cheese in place, drain off the excess sweet chilli sauce into a small bowl and reserve.
Place the remaining Sweet Chilli PHILLY cheese in another mixing bowl.
Add the juice and zest of the lime and coriander.
Using the back of the fork, mash the lime juice, zest and coriander through the cheese.

Spread the cheese mixture over the bilini.
Top with a cooled prawn
Drizzle 1/4 teaspoon of the reserved sweet chilli sauce over the prawn and garnish with a coriander leaf.



These are so easy and yummy.  I guarantee your guests will be asking you for the recipe.
