Chicken Larb and a Low Carb Diet


There is no doubt that eating fewer high GI carbs, leads to weight loss.  It's just that bread, pasta and rice are so easy and natural for us to combine with a meal.
 Be it as a sandwich, as an addition to a home cooked Asian meal, or as an accompaniment  to a sauce, bread, pasta and rice are too often on then menu at the Beach House.


This is all changing as I have put on some weight over the Christmas period and it needs to be shifted.  I had a check up with the doctor the other day.  She said to me, that keeping your weight within the healthy range, is such a barrier to so many diseases.  S o it's definitely worth the effort to shift some, especially for someone like me who potentially has diabetes, cancer and heart disease in her genes.  Problem for me is that I like food very much.  So I need to eat the right thing, if I am to stay in shape.  So lately I have been trying a few no carb options and here's one that was fabulous.

Chicken Larb
Serves 2
1 tablespoon peanut oil
300g/11 oz chicken thighs minced
1 small onion finely diced
1-3 tablespoons  fish sauce
juice of 2 limes
1 teaspoon sesame oil
3 tablespoons coriander chopped
3 tablespoons mint leaves picked and chopped
1 large green chilli finely sliced to garnish

Heat the oil in a saucepan over a medium heat.
Saute onion until translucent.
Add chicken and cook for about 10 minutes, stirring with a fork so it separates. 

In a small bowl mix  lime juice, sesame oil and fish sauce, 1 tablespoon at a time to taste, to make the dressing.

Place cooked chicken into a serving dish, add coriander and mint and mix to combine.

Add the dressing and garnish with chopped green chilli.

So simple and delicious.


I only wish I had the energy of the biggest beach house brat, who uses up all the carbs he eats.  He seems to have found his sporting niche in competitive mountain biking and can ride for hours and still enjoy it.
