Profiteroles with Vegan Chocolate Sauce using Avocado


I don't know about you, but I am addicted to chocolate.  I seems I can go cold turkey on alcohol, coffee, pasta and potatoes, but if there is chocolate, I will find it and devour more than a recommended portion in one sitting, without batting an eyelid.


So for an addict such as me, who needs to constantly eat sensibly, so as not to resemble the side of a house, it is better if  chocolate is made from avocado and raw cacao powder.  All still with many calories, but they are good calories, high in nutrient value as well.  You only need a couple of these to feel satiated, so it's better than devouring a block of commercially produced chocolate, in one sitting, with all it's evil ingredients.


Profiteroles with Vegan Chocolate Sauce

For the Choux Pastry
1 cup water
80 g/3oz butter
1 cup plain flour sifted
3 eggs whisked

For the Chocolate Sauce
1 ripe avocado
4 tablespoons raw cacao powder
2 tablespoons pure maple syrup

Pre heat oven fro 200C/400F
In a small pot, place the water and butter.  Bring to the boil over a medium heat.
Reduce heat and add the flour.  Stir until a ball forms and the mixture comes away from the side of the pot.
Add the whisked eggs in thirds, mixing well each time, until all is absorbed.
Using a teaspoon take a heaped portion and roll into a ball with your hands.
Place on a lined baking tray.  Continue until mixture is all used.
Bake for 25-30 minutes.
Cool for about 10-15 minutes.
Cut a slot in each profiterole and put a generous teaspoon of chocolate sauce in each.
Serve whilst warm.

For the Chocolate Sauce
Mash the avocado so there are no lumps
Stir in cacao powder and maple syrup until the sauce is smooth and creamy.
Serve as above.
These are simple to make and simply delicious.

    Il est bon de manger du chocolat ! C'est excellent.
    Je n'aurais pas pensé en déguster avec de l'avocat ! mais pourquoi pas ? On en trouve bien du saucisson au chocolat.
