Cinnamon Walnut and Coffee Cake Recipe

Hello my darlings is there anybody left out there in blogville? 



I made this fabulous easy Cinnamon Coffee and Walnut Cake recently and I just had to post it on my little corner of the web.  With all those lovely raspberries it almost looks festive.  Put it on the Christmas menu perhaps.


Yummy yummy yummy I've got love in my tummy.  This Cinnamon Coffee and Walnut Cake is to die for.
Cinnamon Walnut and Coffee Cake

250g softened butter
150g Caster Sugar
50g Walnuts chopped
5 large eggs
300g plain flour sifted
1 tablespoon baking powder
130ml freshly brewed coffee
Pinch of Salt
1 tsp vanilla

For the ripple
75g walnuts
1 heaped teaspoon cinnamon
25g brown sugar

To serve
300ml thickened cream
50g fresh raspberries
1 tblspn of icing sugar

For the Ripple
Finely grind walnuts.  Mix in sugar and cinnamon and set aside.  

Beat butter and sugar until pale.  Add eggs, coffee and sift in dry ingredients. Combine then fold in chopped walnuts.

Put half the batter into a prepared loaf tin. Sprinkle the ripple mixture onto the batter in the tin and then cover with the remaining mixture.  Use a knife to make a swirly pattern through the batter.

Bake for 1 hour and remove and cool in the tin.

To serve:
Whip the cream until soft peaks form.  Spread over the cake and top with raspberries and sifted icing sugar.


And what do you think of my vintage blue canisters?  I stumbled across them in a charity store at Neutral Bay.  Expensive but worth it.
