Prawn Cocktails with a Homemade Cocktail Sauce Recipe


This is entertaining at its simplest.  With the warmer month upon us, this recipe is a good one for the balmy Australian Spring/Summer.


A Prawn Cocktail with a Homemade Cocktail Sauce, may be a throw back from de rigueur 70's dinner party culture, but it tastes fresh and fabulous  and is just as good in the 21st century,  as it was all those years ago.

The key to success here, is total freshness and not to use store bought cocktail dressing.  This recipe can also extend to feed a crowd.


Prawn Cocktails with Cocktail Sauce Recipe

6 large prawns per guest
Iceberg lettuce diced
Avocado cubed (1 per 6 guests)
1/2 lemon slice per guest
More lemon wedges to serve
Thickened cream (1/2 cup per 6 guests)
Tomato sauce
Worcestershire sauce

Gather the number of tumbler glasses required.
Lay them out on a tray that will fit neatly into your fridge
Evenly divide the lettuce and avocado across each glass
Arrange 6 prawns in or around each glass
Garnish each glass with 1/2 a slice of lemon

To make the cocktail sauce
Start with 1/2 cup of thickened cream
Slowly add tomato sauce, using one dessert spoon at a time, until you have the taste you like
Add a teaspoon of Worcestershire sauce to finish, add more to taste if required.

Serve sauce and lemon wedges on the side and enjoy.
This is also traditionally served with little triangle sandwiches of brown bread and butter with the crusts removed.  Do this if you want to really take it back to the 70's
