Easy plated Seafood Entree for 20 People For Christmas

So we made this easy plated seafood entree for 20 people for Christmas lunch.  We were asked to bring a plated entree for the Christmas lunch.  It had to be super easy and not complicated to assemble in someone else's kitchen.

I set the template up for Mr Beach House and the production line worked a treat.  My sister inlaw said, ''You've clearly done this before''.

So here's what I did.  

I bought 20 quality plastic side plates
Made 2 of these terrific easy salmon loaves, which also fit into the budget and should be made the day before.
Bought 40 cooked prawns and a medium sized packet of smoked salmon.
You will need 2 -3 lemons

I made a dill and lemon dressing by combining:
1 cup of whole egg mayonaise
Juice of one lemon
1/4 cup dill chopped
Sea salt to taste.
Combine all ingredients and stir.

To assemble
Slice the salmon loaves and cut each slice in half and arrange as per the picture.
Link the prawns by their tails and place neatly on the plate
Evenly divide the salmon between plates
Place a large teaspoon of mayo dill dressing on each plate
Garnish with mini lemon and dill sprigs.
