Chicken A la King


So being in iso has been a great chance to start blogging again.  Let's see how long it lasts.  My blog looks the worse for wear as I clearly need to pay Photo Bucket some money to get what are my photos back in focus.  



My web designer must have used their design graphics all those years ago back in 2011 when they were free, but now they need to be paid for.

 I will get to that, but for now, I thought I'd share a simple recipe that doesn't break the budget.  You can find many others here.

Anyway, this recipe uses up roast chicken leftovers, it's healthy and without cream or rice is quite slimming and lowish carb too.  It's a little bit like guilt free comfort food and let's face it, we could all do with a bit of comfort right now.

Chicken a la King with no cream

1/2 a cooked chicken diced (BBQ is fine)
1 tablespoon olive oil
2 tablespoons butter (optional for non-slimmers)
1  onion diced
1 green capsicum (Pepper) deseeded and diced
1 large stalk of celery finely sliced
250g/0.5 lbs field mushrooms sliced
2 cups of low-fat milk
2 tablespoons cornflour

Before the thickening is added

1. Saute onion in medium heated oil and butter.

2. Add celery, capsicum and mushrooms cook for another 5 minutes until softened.

3. Add chicken cook for 2 minutes.

4. Put the cornflour into a jug with milk.  Whisk to combine.

5. Pour over chicken, heat and thicken.

6. Add salt and pepper to taste.

7. Serve with steamed basmati rice if desired.

That would have to be one of the quickest easiest recipes on this blog.  My kids gobble this up too and it's all part of my attempt to keep us well fed and healthy.

On other matters iso.  Like many, I have been homeschooling.  Only the littlest Beach House Brat at this stage.  Sadly the biggest BHB is on his own, as he is doing the HSC.

The homeschooling sheet said to take 10 pictures of living things.  So we did.  Here are some of them.  It had rained which added even more beauty to the landscape.
