Spinach au Gratin
Me? Well one would think I had been chained to the kitchen over the holiday period, with the amount of food popping up here on this blog. I must say that feeding a family three meals a day for the last 2 weeks, has been a little on the stressful side and has blown the weekly food budget out of the water. So much so, that when Mr Beach House began eating off my plate the other day, along with some other very annoying behaviour at the yacht club, it ended in tears, with me getting up and walking out. Leaving him to the spoils of what looked like a very nice Thai Beef Salad. Had I been allowed to eat it in peace, I could have given you a more definitive answer on that. But no..........

Easy Spinach au Gratin
serves 4
100g butter or a big knob
2 heaped dessert spoons plain flour
1 cup low fat milk
1 cup grated tasty cheese
1 packet frozen spinach defrosted and with the water sqeezed off
salt and pepper to taste
Melt butter in a small pot over a medium heat. Add flour and mix into the butter. Slowly whisk in milk, constantly stirring to avoid the development of lumps. If they do appear continue to whisk until they disappear, which they should. If they don't, you can push the mixture through a sieve.
Once the white sauce has thickened, add the cheese and stir to combine.
Once the cheese has melted, mix in spinach and salt and pepper and serve hot.
I always pre make this and leave it to sit on the stove covered until needed. It reheats well. Serve as a side dish to red meat. This is also lovely served on toast as well, but is not for slimmers.

ReplyDeleteIt's always such a shock when your husband voluntarily does something like emptying the dishwasher! My husband always says to me, 'Why didn't you ask?' but it's so much better when you don't have to! Love the look of the spinach gratin - delicious! xx
